Making Blue Vein Cheese

So far in our series of cheesemaking workshops we have made Haloumi, Camembert, Fetta and this time, blue vein cheese with our local herdsman and cheesemaker in residence, Nathan Burke. We always make a couple of other simple cheeses along with the main ones - this time it was ricotta and marscapone. Hygeine was the catchcry of the day, which included a potluck lunch provided by the participants. As with these hands-on workshops, there was much banter and laughter reverberating around the room. Lots of cooperation and sharing of the cheesemaking tasks, including the clean up at the end of the day. We all went home with cheese we could consume almost straight away, plus some homework over the next couple of weeks, inoculating our blue vein cheese. I can imagine a new craze - cheesemaking parties, where you get some friends together, some unhomogenised milk and some finger food and refreshments, invite your local cheesemaker and shezammm!! Instant fun.
